Apalachicola Bay and the barrier islands — St. George, St. Vincent, Dog Island — fish differently than most Florida destinations because the Apalachicola River pushes enormous volumes of fresh water and nutrients into a relatively shallow estuary, creating habitat that draws species you rarely associate with the Gulf. Redfish, speckled trout, and flounder are the bread-and-butter targets year-round, but the deeper cuts along the barrier island passes and the bay's oyster-bar edges also hold black sea bass on structure through cooler months. Bluefish show up in the passes and nearshore Gulf in fall and winter when water temps drop into the low 60s, often crashing baitfish at the surface near the island cuts. Weakfish — locally called gray trout — turn up in the deeper bay channels in cooler weather and are underappreciated here.

Work falling tides hard, especially where marsh drains and oyster bars funnel baitfish out of the shallows into deeper adjacent water — fish stack at those transition edges waiting. For flounder, slow-drag a live finger mullet or a paddle-tail soft plastic along sandy bottom pockets adjacent to grass and shell; they ambush rather than chase. Black sea bass and the occasional big sheepshead hold tight to bridge rubble and submerged structure, so drop a fiddler crab or small jig directly on the structure. Bluefish and weakfish respond well to a fast-retrieved spoon or jerkbait through current rips in the passes. In cold snaps, avoid open shallow flats — fish go deep and slow your presentation accordingly.
